Avocados are natures answer to fast food. This is my current favorite lunch (or quick supper). There's no cooking required and it takes about 1 minute - OK maybe 2, to assemble. Plus it's tremendously good for you, these luscious fruits are packed with potassium, folic acid and vitamin K, not to mention good sources of vitamins B6, C and E. On a more practical note, this is a totally delicious AND filling meal. Could you possibly ask for a better lunch? In fact what is your favorite lunch?
Avocado Lunch Special
Ingredients;
1 avocado
2 tablespoons of your favorite mayonnaise
Zest of a lime
A couple of squeezes of lime juice
Sea salt
Freshly ground black pepper
Fresh herbs - your favorite or whatever you have on hand - I used thyme and basil from the garden
1 tablespoon capers (optional)
A sprinkle of red wine vinegar
A sprinkle of olive oil
A scattering of red pepper flakes
A sliced tomato
In a medium sized bowl mix together the mayonnaise, salt, pepper, lime zest and juice.
Slice the tomatoes, lay on the side of a plate. Cut the avocados in half, fill with the mayonnaise mixture, top with a drizzle of olive oil, red wine vinegar, capers, red pepper flakes and fresh herbs.
