Spiced Roast Sweet Potatoes Goats Cheese Tomato and Arugula Salad


Here's a nod to Fall yet with the flavors of summer.  Sweet potatoes I believe are the best vegetable on earth.  Toss them in cumin, coriander, cinnamon and some olive oil and roast them - OH - they are absolutely lip smacking good.  It's important to douse them with more olive oil, lime juice, salt and pepper just before serving, you won't be disappointed.


This is great with a grilled chicken breast or equally wonderful by itself.



Spiced Roasted Sweet Potatoes, Goat's Cheese, Tomato and Arugula Salad.


3-4 Sweet Potatoes


Olive oil


1 teaspoon cumin


1 teaspoon cinnamon


1 teaspoon ground coriander


Pinch of red pepper flakes


salt and pepper


4 oz goat's cheese


Cherry tomatoes


A handful of arugula


Cilantro


Juice of a lime


Heat the oven to 425 F


Peel and chop the sweet potato into chunks.  Toss in a tablespoon or so of olive oil, along with the cumin, cinnamon, coriander, red pepper flakes, salt and pepper. 


Place the the potatoes on a baking sheet and place into the oven and roast for approximately 40 minutes. 


Remove from the oven, place on a platter, crumble over the goat's cheese so that it melts slightly.  Scatter over the cherry tomatoes, halved or not, arugula and cilantro. 


Pour over a little more olive oil, squeeze over the lime juice, salt and pepper. Simple, relatively quick and delicious!
