The Tomato Garden





It's that time of the year.... these little gems are bursting on the vine.  They're so sweet they taste like candy...







And how about these Zebra's?? aren't they gorgeous... so delicious drenched in olive oil, red wine vinegar, crushed garlic, salt and pepper....



OK, time to admit it, I'm not the gardener.  I do not possess a green thumb, I can take no credit, my husband is the hero in the garden.  My favorite result of all his hard work is this.....









Flat breads with a feta spread and sliced tomatoes.







For the Feta Spread;

A large chunk of best quality feta

Olive oil

Sea salt and freshly ground black pepper

Red wine vinegar

1 clove of crushed garlic

Zest of a lemon and lemon juice

Your very favorite flat breads

Assortment of tomatoes

Fresh herbs, basil and oregano are wonderful

Place all the ingredients for the spread in a the bowl of a food processor and blitz.  It will be quite chunky.  Add more oil, lemon juice etc to your taste.

Spread the feta mixture on the flat breads, top with the tomatoes, sprinkle with sea salt and a grinding of black pepper, drizzle over some more olive oil and garnish with fresh herbs.
